Just checking I applied the correct line here up until the point where I'm asking for advice as to what you guys would do?

Table Riviera (6 max)(Real Money)
Seat 6 is the button

UTG: Player3 ( $12.58 USD ) - VPIP: 22, PFR: 16, 3B: 5, Hands: 174
MP: Player4 ( $24.72 USD )
CO: Player5 ( $8.37 USD ) -
BTN: Player6 ( $9.65 USD )
SB: Player1 ( $7.13 USD )
BB: Hero ( $10.00 USD )

** Dealing down cards **
Dealt to Hero [ Qc Qh ]
Player3 raises [$0.50 USD]
Player4 folds
Player5 folds
Player6 calls [$0.50 USD]
Player1 folds
Hero raises [$2.40 USD]
Player3 calls [$2.00 USD]
Player6 folds

** Dealing Flop ** [ 8s, 6c, Jc ]
Hero bets [$4.44 USD]
Player3 raises [$10.08 USD]

So what we thinking here?

Can't really fold an overpair in a 3bet pot when we've put in more than 65bb of our stack.

Just have to call and hope to see FDs or Jx.

Don't like your flop sizing it looks like you made it pot, not sure if that really achieves much. I think betting $2.50~ does the same thing.

I made the bet 80% pot on the flop.
With regards to making it $2.50 for example (50% pot), what would you be looking to achieve with a lesser bet?

You have to go with an overpair at this point, given the size of the pot.

Note that even though this is a squeezed pot, because of the open raise size of 5bb your squeeze is 24bb which is 4 bet territory. This makes it pretty much impossible to let go of an overpair. You probably could have squeezed to $2.00 FWIW, $2.40 does seem a little big, but it's nitpicking at these stakes.
